To craft a whiskey of exceptional character, you need an exceptional process. At the core of our legendary whiskey making process is the number three. We only use three natural ingredients, three varieties of grain distillations and three different types of maturation casks. This makes Tullamore D.E.W. the worlds only triple distilled, triple blend, triple matured whiskey and yields an award-winning flavour profile of true Irish character.

Triple Distilled

to produce a whiskey of exceptional smoothness

 

Triple Blended

of all three types of Irish whiskey - golden grain, full-flavoured malt, and rich pot still: yields a whiskey of greater complexity and Irish true character.

 

Triple Cask Matured

in three distinct cask types - traditional refill, ex-bourbon and ex-sherry: to create unrivalled depth and balance of flavour

MILLING

Malted and unmalted barley is milled with water into a porridge - like mixture. This step frees the starch from within the grain.

 

MASHING

Three washes of heated water are passed over the mixture in mash tuns, drawing all the starch from the mix. A naturally occurring enzyme called diastase mixes with the diluted starch, converting it into a sugary liquid called wort. 

 

FERMENTATION

The wort is transferred to our fermentation vessels, each holding 34,000 litres. Yeast is added to the mix, which converts the sweet wort into strong beer (8-10% alcohol by volume - ABV) called wash.

 

DISTILLATION

The wash is distilled 3 times in 3 different styles of copper pot still. The handcrafted copper pot stills used in the distillation process are based on the design of those used in the original Tullamore distillery. At each step of the distilling process the water volume is reduced, which increases the alcohol strength, until we have our new spirit at 80% ABV.

 

MATURATION

Unlike many other whiskeys we use three cask varieties in maturation: traditional, ex-bourbon and sherry casks. This ageing process yields rich colour and the greater part of our distinctive flavour; further enhancing the complexity and character of the liquid.
