Flavours

Sour, fruity, aromatic, citrus.

PREP TIME

2 minutes

SERVES

GLASS

Coupe, rocks glass.

EQUIPMENT

Shaker, bowl.

GARNISH

Orange zest or a dehydrated orange wheel.

ICE

Cubed ice.

INGREDIENTS

50ml Tullamore D.E.W. Original Irish Whiskey
25ml Lemon Juice
20 ml sugar/simple syrup (or 2 spoons of apricot jam).
1/2 egg white.
2 dashes of Angostura bitters.

HOW TO MAKE

Add all ingredients to a shaker.
Dry shake meaning shake without ice first to let the egg white emulsion.
Fill shaker with ice.
Shake it like a polaroid picture.
Strain it over ice in a fresh glass that you chilled in the fridge.
Garnish with orange peel/zest.

Top Tip

Aquafaba is simply the juice in a tin of chickpeas. It can be strained out and used as an alternative to the egg white, creating the same creamy texture.
